They are a concentrated and valuable source of many essential nutrients. Liver is the most concentrated source of Vitamin A and also contains substantial quantities of Vitamins D, E and K, in addition to many other good quality vitamins and minerals. Kidneys and the heart are both a rich source of iron and all the B Vitamins and like the liver, are a good supply of protein, essential fatty acids and zinc.  Tripe, which is the edible lining of the stomach, has long been known as one of the finest natural foods due to its diverse profile of quality nutrients. It is high in Omega 3 and probiotics.
